Neste trabalho é realizada uma análise dos processos de transferência de calor e massa envolvidos na operação de evaporadores a baixa temperatura com formação de neve utilizados em câmaras frigoríficas para conservação de produtos alimentícios. Um aparato experimental instrumentado foi construído para permitir a avaliação da taxa de transferência de calor desses evaporadores. Parâmetros de operação e geometria foram definidos e utilizados para embasar a proposição de um modelo matemático desenvolvido para avaliar o comportamento dos evaporadores aqui testados. Foi realizado um levantamento bibliográfico extenso visando avaliar o estágio atual das pesquisas na análise de evaporadores a baixa temperatura com formação de neve. A comparação dos dados experimentais com os resultados do modelo foi realizada para ensaios com e sem formação de neve em diferentes geometrias e condições de operação. No caso da análise do processo de formação de neve, foram propostos dois parâmetros para caracterizar o comportamento dos evaporadores neste processo: o tempo de formação de neve e a redução percentual da taxa de transferência de calor após o bloqueio total do trocador devido à formação de neve. Os resultados obtidos na comparação dos dados experimentais e o modelo matemático mostraram-se adequados com uma incerteza de 12% para 95% dos pontos analisados. O modelo matemático aqui proposto pode ser aplicado no projeto de sistemas de refrigeração para câmaras frigoríficas no sentido de otimizar a operação de degelo dos evaporadores empregados.

The research proposed here analyses the process of heat and mass transfer that are involved in the operation of air forced evaporators in low temperature with frosting formation used in refrigerated chambers for conservation of food products. An experimental bench fully instrumented was built to allow the evaluation of the heat transfer rate of the tested evaporators. Operation and geometry parameters were defined and used to provide basis for proposing a mathematical model that was developed to evaluate the behavior of the heat exchangers tested here. An extensive literature review was made in order to evaluate the state of art of the analysis of heat exchangers in low temperature with frosting formation. A comparison between the experimental data and the model results was made for evaporators with different geometries and operation conditions with and without frosting formation. For the frost formation process, two parameters were proposed in order to characterize the behavior of the heat exchanger on that process: the frost formation time and the percentage reduction of the heat transfer rate after the full blockage of the heat exchanger due to the frost formation. The comparison of the experimental data and the mathematical model showed to be adequate with an uncertainty of 12% for 95% of the tested points. The mathematical model proposed in this research can be applied into the design of refrigeration systems for refrigerated chambers inorder to optimize the defrost process for the heat exchangers used on those systems.
