O presente trabalho está fundamentado em uma pesquisa desenvolvida junto à alguns Consultores de Cozinhas Industriais da cidade de São Paulo, e em cinco projetos de Cozinhas Industriais, o que o torna peculiar, apresentando informações atuais e inéditas, extraídas das atividades práticas e cotidianas destes consultores. O material bibliográfico produzido atende aos interesses de profissionais iniciantes e também de arquitetos, engenheiros e nutricionistas já atuantes que visam aprimorar-se e atualizar-se. A eles será possível conhecer os aspectos humanos e técnicos, os quais são itens relevantes para que possam integrar uma equipe de profissionais. Contém, ainda, dados fundamentais para realizar o dimensionamento das áreas das cozinhas industriais visando maior funcionalidade e, também informações sobre os diversos tipos de serviços de alimentação e uma série de recomendações aos projetistas, para assegurar ao usuário, melhor conforto, e aos funcionários, maior eficiência na realização das tarefas.

This work is backed up by a research developed by some consultants on industrial kitchen in São Paulo city as well as by five projects. This makes this work somewhat peculiar, presenting new and up-to-date information taken from daily and practical activities of those consultants. The produced bibliography matches several different professionals' interest such as: architects, engineers and cooks who aim at their improvement. It will also permit these range of professionals to get in touch with technical and human aspects which are essential for them to get themselves involved with industrial kitchen projects. It also contains important data to make projects on industrial Kitchens more functional. It also displays information about several Kinds of foodservice estabilshments and a series of recommendations to professionals aiming at assuring the users better comfort as well as better efficiency toworkers when accomplishing their tasks.
