Na formulação de produtos gordurosos é comum a mistura de óleos e
gorduras, para se alcançar as especificações do produto final.
O objetivo do trabalho foi estudar as interações que ocorrem em misturas
binárias e temárias de gorduras, pela análise das propriedades físicas e químicas
das misturas. Foram ainda elaboradas margarinas com bases gordurosas
adequadas provenientes das misturas, cujas características foram comparadas
com produtos comerciais.
Foram utilizadas três gorduras hidrogenadas comerciais, denominadas
Frygill PF32, Fatgill PF38 e Fatgill PF42 (Cargill Agrícola S.A.). Foi utilizado
um planejamento de 10 experimentos, representados pelas 3 gorduras individuais,
3 misturas binárias e 4 misturas temárias. As amostras foram submetidas às
seguintes análises: pontos de fusão, de amolecimento e de gotejamento, conteúdo
de gordura sólida, viscosidade cinemática, perfil de textura, composição em
ácidos graxos e teor de isômeros trans. Para algumas respostas foi aplicado um
modelo de regressão múltipla do tipo cúbico especial.
Os resultados mostraram que as respostas analisadas não foram
dependentes das interações entre os três componentes. As interações
significativas, entre as gorduras Frygill PF32 e Fatgill PF42 e entre Fatgill PF38 e
Fatgill PF42 demonstraram efeito antagônico para as propriedades de dureza e
conteúdo de gordura sólida, característico de interações eutéticas entre as
gorduras. Para os pontos de amolecimento, fusão e gotejamento, assim como para
a viscosidade, as interações entre as gorduras não foram significativas,
evidenciando um modelo perfeito de mistura.
As margarinas elaboradas com as misturas constituídas por 50% de Frygill
PF32 e 50% de Fatgill PF38 e por 66,6% de Frygill PF32, 16,7% de Fatgill PF38
e 16,7% de Fatgill PF42 apresentaram consistências semelhantes às de
margarinas comerciais duras.
O planejamento estatístico empregado no trabalho permitiu, com apenas
10 pontos experimentais, que fossem encontradas diversas opções para a
formulação de margarinas envolvendo misturas binárias e ternárias de gorduras.

In the formulation of the fat products, it is usual practice the blending of
oils and fats, to meet fmal product specifications.
The objective of this study was to investigate the interactions that occur in
binary and temary mixtures of fats, by analyzing physical and chemical
properties of the blends. Margarines fonnulated with proper fat bases arising
from mixtures were prepared. The margarine characteristics were compared to
commercial products.
Three commercial hydrogenated fats were used (Frygill PF32, Fatgill
PF38 and Fatgill PF42 - Cargill Agrícola S.A.). A ten-run design was used,
corresponding to 3 original fats, 3 binary blends and 4 temary blends. The
following analyses were perfonned: melting point, softening point, dropping
point, solid fat content, kinematic viscosity, texture profile, fatty acid
composition and trans isomers content. A special cubic multiple regression model
was applied to some analytical data.
The results showed that the estimated properties were not dependent of the
three components interactions. The significative interactions, blends of Frygill
PF32 and Fatgill PF42 and blends of Fatgill PF38 and Fatgill PF42, showed an
antagonic effect to hardness and solid fat content, typical of eutectic interactions
of fats. The interactions were not significative for melting point, softening point,
dropping point and viscosity, attesting a perfect mixing model.
The margarines prepared with the blends: 50% Frygill PF32 + 50% Fatgill
PF38; 66,6% Frygill PF32 + 16,7% Fatgill PF38 + 16,7% Fatgill PF42, showed
consistency similar to commercial Brazilian stick margarines.
The statistical design used enable to find several altematives to margarine
formulation, from binary and temary blends of fats, by using ten experimental
points.
