A Educação Nutricional tem sido apontada como uma importante atividade do Nutricionista, em função das necessidades de saúde da população. O processo de formação deste profissional foi desencadeado por fatores sociais, políticos e educacionais. O presente trabalho pretende analisar o processo e o contexto das reformulações curriculares em um Curso de Nutrição de uma escola pública de ensino superior e o impacto no conteúdo relacionado à educação nutricional. Trata-se de estudo de caso, por meio de revisões bibliográficas e documentais, não exaustivas, incluindo relatórios, livros, teses e artigos sobre a trajetória da profissão de Nutricionista, no Brasil. Verificou-se que o processo inicial de criação dos cursos de nutricionistas, foi decorrente de intervenções técnico-científicas, na área da saúde. Posteriormente, os egressos destes primeiros cursos buscaram o fortalecimento da profissão, por meio do reconhecimento do curso de formação, como de nível superior e a regulamentação da profissão. Nesse primeiro período, a formação do nutricionista estava fundamentada nos aspectos fisiológicos, patológicos e bioquímicos da nutrição, na composição e no uso culinário dos alimentos. Posteriormente, fatores externos à Universidade como a exigência do currículo mínimo e abertura de oportunidades de trabalho, resultaram em mudanças na estrutura curricular. Em seguida ocorre o fortalecimento do ensino superior, com a autonomia universitária, a criação dos departamentos e a implementação da pós-graduação. Nesse segundo período novos conteúdos e atividades práticas (estágios) são inseridos na estrutura curricular. Aspectos pedagógicos de educação sanitária e agrícola, além das disciplinas Sociologia e Antropologia são introduzidos na estrutura curricular. A Educação Alimentar está presente como conteúdo da disciplina de Nutrição em Saúde Pública. Ainda atendendo às demandas externas, decorrentes de um novo currículo mínimo, amplia-se o número de disciplinas e consequente fragmentação de conteúdos (saúde da criança, saúde materna). Nesse terceiro período, cria-se a disciplina Educação Nutricional. Mudanças internas da Universidade alteraram a responsabilidade pelo curso. O curso tem uma reestruturação importante com a modificação de duração e período. Disciplinas como Educação Agrícola, Educação Sanitária e Pedagogia desaparecem do currículo, dando lugar à Promoção da Saúde. As disciplinas de ciências humanas, como Sociologia, Antropologia e Psicologia tornam-se "aplicadas à Nutrição". Atualmente, aproximação do setor da saúde e da educação para o estabelecimento das diretrizes curriculares e o incentivo do Ministério da Saúde para mudanças nos cursos de saúde, refletiu no processo de reformulação do curso. A reformulação foi um processo complexo, por envolver vários atores e o desenvolvimento de várias atividades de escrita e síntese. A nova estrutura curricular, está fundamentada em disciplinas que abordam aspectos da Segurança alimentar e nutricional, da Atenção dietética, da Ciência da Nutrição e dos cenários de prática profissional. A disciplina Educação Nutricional desaparece com a inclusão de outras que incorporam temas relacionados a ela. Verificou-se, nessa análise histórica, que a disciplina Educação Nutricional foi alterada ao longo das reformulações curriculares em função das políticas públicas na área do ensino e da saúde. Sugere-se que essas políticas sejam incluídas na formação do profissional para garantir o desenvolvimento técnico e científico na área de intervenções educativas.

The Nutrition Education has been identified as an important Activity for the Nutritionist on the basis of the population healthcare needs. The process of formation of this professional was triggered by social, political and educational factors. This work intends to evaluate the process and context of curricular changes in a Nutrition Course of a public school of higher education and the impact on the content related to nutrition education. This is a case study through a literature and documentary review, not exhaustive though, including reports, books, theses and articles on the history of the nutritionist profession in Brazil. It appears that the initial process of setting up the nutritionist course was due to technical and scientific assistance in the healthcare area. Afterwards, the graduates of these early courses seek the strengthening of profession, throughout the recognition of their training courses as a higher education course and through professional regulations that occurred in the 1960s. During that period, the dietitian education was based on physiological, pathological and biochemical aspects of nutrition, the composition and the culinary use of food. External factors to the University, such as the requirement of the minimum curriculum and the opening of employment opportunities, resulted in changes in the curriculum. The strengthening of the higher education, as regards the university autonomy, the creation of departmental and the implementation of post graduation, diversifies the grounds of the course, by the insertion of new content and the inclusion of practical activities (internships). Pedagogical aspects of healthcare education and agricultural disciplines in addition to the sociology and anthropology are introduced into the curriculum. The Food Education content is present as a discipline of Public Health Nutrition. In order to meet the demands of teaching, due to the new minimum curriculum, it broadens the number of subjects and consequent fragmentation of content (child healthcare, maternal healthcare). It creates the discipline Nutritional Education. Internal changes at the University altered the responsibility for the course. The course has a major restructuring with the modification in the duration and period. Disciplines like Agricultural Education, Health Education and Pedagogy disappear from the curriculum, giving place to Health Promotion. The humanities, such as sociology, anthropology and psychology become \"Applied Nutrition\". The approximation of the healthcare sector and education for the establishment of the curriculum guidelines and the encouragement of the Ministry of Health for changes in healthcare courses, reflected in the reformulation of the course. The reformulation was a complex process because it involves various stakeholders and the development of several writing activities and synthesis during its process. There have been changes in the structure, resulting from public policies in the area of healthcare that directly affected the structure of the course curriculum studied.
