A escolha pelo estudo de consumo de alimentos diet e/ou light foi feita pelo crescimento e rápida inclusão destes produtos no mercado brasileiro, provavelmente pelas preocupações dos consumidores com a boa saúde e forma física, além da facilidade de preparo e manipulação. O progresso na tecnologia dos alimentos também facilitou a aceitação dos diet e light melhorando o sabor dos produtos com o uso de novos ingredientes. O objetivo deste trabalho foi conhecer o perfil familiar de consumo dos alimentos diet e light e para isso foram estudados dados de consumo alimentar coletados na Pesquisa de Orçamento Familiar - POF, realizada em 1998-1999 em São Paulo, grande centro urbano, difusor de novas tendências. Iniciou-se o estudo com revisão de literatura apresentando as tendências alimentares, os aspectos econômicos, de nutrição e de saúde ligados ao consumo de alimentos diet e/ou light e a evolução da legislação nacional, internacional e de rotulagem que os regulamenta. Nesta POF uma metodologia indireta foi usada para avaliar o consumo alimentar, coletando os gastos familiares com alimentos durante um mês em 2351 domicílios. Assim, a unidade amostral é o domicílio e estudou-se para cada um informações quanto à renda familiar, despesas com alimentos (em geral, diet e light), compra de medicamentos para a doença diabetes e características de gênero, idade e grau de escolaridade do chefe do domicílio. Seis grupos de alimentos foram selecionados: Leite e Substitutos, Panificados, Doces, Bebidas, Gorduras e Adoçantes. Foram estudados descritivamente e com aplicação do modelo de regressão logística os alimentos diet e/ou light em geral e em cada um dos seis grupos de consumo. Os resultados demonstraram associação entre classe de renda, grau de escolaridade e presença de portador da doença diabetes no domicílio com o consumo de produtos diet e/ou light.

The choise of diet and light food consumption was made because these products have presented a large, significant and fast inclusion in Brazilian market. It seems to be connected to people's concerns with having a good looking body and good health, besides the preparation and handling readiness. Furthermore, the progress in food technology brought a much better taste to diet and light products with the use of new ingredients. São Paulo was chosen for being a big urban center and having important influence of new tendencies difusion. We began this work with literature review about national and international legislation to understand its evolution and we explained the diet and light consumption history and finished the review studying aspects of Nutrition, Economy and Health. This work's aim is to know the family consumption profile about diet and light food. It was done based on the data on family food consumption from POF (Pesquisa de Orçamento Familiar) made by FIPE Fundação de Pesquisas Econômicas) in 1998/99 in São Paulo metropolitan region. In this POF an indirect metodology was used to evaluate the food consumption based on effective domestic expenses, and features of 2351 households were compiled during a month. So, the sample unit was the household and all the information about food expenses (in general, light and diet products) income, presence of diabetes patients, age, sex and the head of the house's education degree. Six groups of food were selected for presenting diet and light food consumption which are milk and dairy products, bakery, confectionery, non-alchoholics beverage, fats and seasoning and low sugar. All these features were submitted to statistical treatment and the results showed the relationship between income class, education degree and presence of diabetes mellitus patientes in the household. diet and light food consumption was verified in 50% of the households researched which are mostly distributed in the upper class. When increasing the education degree in the households the diet and light consumption always increases. The same happening where there are Diabetes Mellitus patients.
