Alimentos vendidos em via pública oferecem solução ao problema de tempo e custo para grande parte da população das grandes cidades. Este estudo tem como objetivo avaliar os alimentos de rua em áreas hospitalares nos aspectos sanitário e sócio-econômico, verificando os critérios de higiene na conservação e preparo dos alimentos em seis regiões da cidade de São Paulo. Os dados foram coletados através de entrevista e observação dos procedimentos em 60 pontos de venda. Manipuladores e consumidores de alimentos vendidos na rua foram entrevistados visando compreender melhor o desenvolvimento deste mercado. Dos alimentos encontrados 55% são lanches a base de carne, acompanhados por molho vinagrete (48,3%) e os salgados fritos (35%). Insetos, pombos e resíduos orgânicos estão presentes em 48,3%, 43,3% e 53,3% dos pontos de venda respectivamente. Os alimentos encontram-se protegidos em 76,7% dos locais por recipientes adequados porém mantidos à temperatura ambiente. Em todas as regiões estudadas os critérios de higiene pessoal e comportamento dos manipuladores comprometem o produto vendido à população, por desconhecimento dos critérios de segurança para manipular alimentos e ausência de infra-estrutura adequada. Dos consumidores entrevistados 25% são pacientes dos hospitais. Programas de educação sobre alimentos seguros e capacitação em manipulação de alimentos são necessários para que manipuladores e consumidores sejam beneficiados.

Foods commercialized on thoroughfare offer solution when the problem is lack of time and/or money for many people in the large cities. This study aims to evaluate street foods in hospital neighborhood under sanitary and socioeconomic aspects, verifying the hygiene criteria in the food conservation and preparation, in six regions of São Paulo City. The data were collected through interviewing and observation of the manufacturing procedures in 60 street food sale places. Food manipulators and street food consumers were interviewed, in the purpose to better understand the development of this market. Among the collected food samples, 55% are meat-based sandwiches, which 48,3% of them are followed by vinegar sauce, and 35% by fried snacks. Insects, pigeons and organic waste are exposed in 48,3%, 43.3% and 53.3% of the sale places, respectively. The foods are protected by proper containers in 76,7% of the places; however, they are maintained at room temperature. In all the studied places, the criteria of personal hygiene, as well as the manipulator behavior, jeopardize the products sold to the population. This is caused by the ignorance of the security criteria to manipulate foods, and lack of adequate socioeconomic infrastructure. Among the interviewed consumers, 25% are hospital patients. Educational programs about safe foods and qualification in food manipulation are necessary for the benefit of manipulators and consumers.
