O trabalho apresenta uma introdução à história das tavernas no Brasil. A partir de fontes de naturezas diversas, descrevemos o processo de emergência, disseminação e transformação do comércio e da cultura de taverna entre os séculos 18 e 19. As áreas de mineração e as zonas de plantation foram os espaços privilegiados da análise, incluindo a cidade do Rio de Janeiro. Estabelecimentos contraditórios construídos para a ocupação do sertão, ora abrigando momentos de autonomia, ora reproduzindo as imposições do cativeiro, as vendas e tavernas hospedaram a ordem e a desordem, o caminho e o descaminho, o lícito e o ilícito. Ao examinar seus momentos decisivos no campo e na cidade, verificamos que, apesar de estigmatizadas, elas cumpriram funções variadas que garantiram sua longevidade.

The thesis presents an introduction to the history of taverns in Brazil. Drawing on sources from several modalities, we described the emergency, dissemination and transformation of tavern commerce and culture in the 18th and 19th centuries. The mining areas and plantation zones were privileged focuses of analysis, including the city of Rio de Janeiro. Contradictory establishments, built for the occupation of the sertão, sometimes housing scenes of autonomy, sometimes reproducing the impositions of captivity, sales and taverns hosted order and disorder, the path and the detour, the licit and the illicit. When examining its decisive moments in the countryside and in the city, we found that, despite being stigmatized, taverns fulfilled a varied range of functions that ensured their longevity.
