Esta pesquisa trata do uso de equipamentos elétricos no preparo de alimentos no espaço doméstico paulistano entre os anos 1920 e 1960 com o objetivo de demonstrar seu papel ativo na conformação do conceito de "cozinha moderna". As práticas higienistas e de racionalização atuantes no processo de expansão urbana e industrialização de São Paulo neste período remodelaram a casa guiadas pela ideia de progresso. Como parte de um projeto de modernização capitalista, este processo foi estimulado e difundido pela expansão do consumo e intensificação do mercado publicitário voltado para o público feminino, este responsável pela circulação, em São Paulo, de modelos de casa, família e trabalho doméstico comuns nos Estados Unidos. Neste quadro histórico, o estudo da utilização dos equipamentos elétricos no processamento dos alimentos, feito mediante o confronto de fontes documentais diversas como anúncios, catálogos, manuais de instrução, manuais de economia doméstica e revistas ilustradas, permitiu tensionar os discursos que normatizaram a rotina doméstica. A convivência das novas tecnologias com antigos hábitos, práticas e padrões corporais no espaço da cozinha revela uma dissonância entre a realidade paulista e aquela difundida pelo ideal estadunidense de modernidade e evidencia que, no Brasil, a introdução dos eletrodomésticos aprofundou desigualdades de gênero, raça e classe social.

This research deals with the use of electrical appliances in food preparation in domestic spaces in São Paulo between the 1920s and 1960s, with the objective of demonstrating their active role in shaping the concept of the "modern kitchen". The hygienic and rationalization practices that were present in the process of urban expansion and industrialization of São Paulo in that period remodeled the home, guided by the idea of progress. As part of a capitalist modernization project, this process was stimulated and disseminated by the expansion of consumption and intensification of advertising aimed at the female audience, which was in large part responsible for the circulation, in São Paulo, of models of home, family and domestic work common in the United States. In this historical context, the study of the use of electrical appliances in food processing, carried out by comparing different sources such as advertisements, catalogs, instruction manuals, home economics manuals and magazines, allowed us to question the discourses that standardized domestic routines The coexistence of new technologies with old habits, practices, and bodily standards in the kitchen reveals a dissonance between the reality of São Paulo and that disseminated by US ideals of modernity and shows that, in Brazil, the introduction of home appliances deepened gender, race and social class inequalities.
