A indústria de alimentos vem enfrentando enormes pressões competitivas, buscando, cada vez mais, por inovações a fim de acompanhar as transformações do mercado. Uma estratégia bastante difundida para esse fim consiste no relacionamento com startups, gerando, assim, novos produtos e/ou serviços com mais agilidade (estratégia conhecida por inovação aberta). Assim, o objetivo geral desta dissertação consiste em discutir como ocorrem os relacionamentos entre as empresas líderes de mercado no segmento de alimentos no Brasil com as startups para a geração e adoção de inovações, com os objetivos específicos de descrever os principais modelos de conexão adotados, bem como os desdobramentos das soluções geradas em conjunto. O estudo possui natureza qualitativa baseado em estudo de multicasos, tendo sido estruturado por meio de entrevistas com três empresas que se destacam no quesito inovação, reconhecidas como líderes de mercado no setor de alimentos no Brasil. Os resultados obtidos apontam similaridades entre as práticas adotadas pelas entrevistadas ao se relacionarem com as startups. No entanto, notam-se formas de organização interna diferentes, a partir de suas trajetórias individuais e outras características próprias. Adicionalmente, os resultados da dissertação contribuem para a continuidade do estudo sobre inovação aberta no setor por identificar fenômenos e estratégias em desenvolvimento.

The food industry has been facing enormous competitive pressures, increasingly seeking innovations in order to keep up with market changes. A widespread strategy for this purpose consists of relationships with startups, thus generating new products and/or services more quickly (a strategy known as open innovation). Thus, the general objective of this dissertation is to discuss how relationships occur between market-leading companies in the food segment in Brazil and startups for the generation and adoption of innovations, with the specific objectives of describing the main connection models adopted, as well as the consequences of the solutions generated together. The study has a qualitative nature based on a multi-case study, having been structured through interviews with three companies that stand out in terms of innovation, recognized as market leaders in the food sector in Brazil. The results obtained point to similarities between the practices adopted by the interviewees when relating to startups. However, different forms of internal organization can be noted, based on their individual trajectories and other characteristics. Additionally, the results of the dissertation contribute to the continuity of the study on open innovation in the sector by identifying phenomena and strategies under development.
