O objetivo geral desta Dissertação foi avaliar a influência do pH sobre as propriedades reológicas, viscoelásticas e mecânicas de soluções coloidais e de géis produzidos com blendas de gelatina e quitosana. Assim, esta dissertação foi dividida em dois estudos, um com soluções coloidais, outro com géis, ambos com diferentes pH: 3,5; 4,0; 4,5; 5,0; 5,5 e 6,0, sendo que o potencial zeta das soluções coloidais das blendas e dos biopolímeros puros foi determinado previamente. No primeiro estudo, soluções coloidais de gelatina suína tipo A (GeA), gelatina bovina tipo B (GeB), quitosana (Q), de blendas de gelatina tipo A com quitosana (GeA:Q) e de gelatina tipo B com quitosana (GeB:Q), foram preparadas e caracterizadas para determinação de propriedades reológicas, por testes estacionários (curvas de fluxo), e propriedades viscoelásticas, por testes oscilatórios (varreduras de deformação, frequência e temperatura). No segundo experimento, géis foram convenientemente preparados a partir de soluções coloidais de GeA:Q e GeB:Q e caracterizados para determinação de propriedades mecânicas, por testes de compressão uniaxial, e propriedades viscoelásticas, por testes de relaxamento de tensão. O potencial zeta de todas as soluções coloidais diminuiu linearmente em função do aumento do pH. A solução Q apresentou o maior valor de potencial zeta, seguida das GeA:Q, GeB:Q, GeA e GeB. GeB foi a única que apresentou valores negativos em altos pH. Assim, o ponto isoelétrico (pI) da GeB foi calculado como 5,1. Ambas blendas apresentaram comportamento pseudoplástico, sendo que a tensão de cisalhamento das blendas GeB:Q foi 10 vezes maior do que a GeA:Q e, consequentemente, a blenda GeB:Q apresentou viscosidade aparente 10 vezes maior do que a GeA:Q, para uma mesma taxa de deformação. Tanto a tensão de cisalhamento quanto a viscosidade aparente aumentaram em função do aumento do pH. Em relação às propriedades viscoelásticas, observou-se que as blendas GeB:Q apresentaram maiores valores dos módulos de perda (G") e de armazenamento (G') que as GeA:Q, sendo que ambos aumentaram em função do aumento do pH. O início da região de viscoelasticidade linear (RVL) para GeA:Q e GeB:Q foi determinado em deformação de 3% e 5%, respectivamente. Segundo resultados dos testes de varredura de frequência, as blendas GeB:Q se comportaram como soluções diluídas. De acordo com os resultados dos testes de varredura de temperatura, as blendas GeB:Q apresentaram temperaturas de transição sol-gel e gel-sol maiores que as GeA:Q, sendo que, essas temperaturas de transição aumentaram em função do aumento do pH. Em relação aos géis, observou-se que os géis a base de GeB:Q apresentaram maiores tensão na ruptura e módulo de Young do que os géis GeA:Q, com valores que aumentaram em função do aumento do pH, contudo a deformação na ruptura não variou tão fortemente, variando entre 50 e 70%. G' e G" foram maiores nos géis GeB:Q, contudo não se observou diferença significativa (p>0,05) entre os valores de tempo de relaxamento das blendas. De maneira geral, o pH influenciou aumentando as propriedades reológicas, viscoelásticas e mecânicas das soluções e dos géis, contudo, o tipo de gelatina (A ou B) também influenciou o comportamento das blendas, com maior efeito na GeA:Q, como consequência da diferença de cargas entre elas.

The main objective of this dissertation was to evaluate the influence of pH on the rheological, viscoelastic and mechanical properties of colloidal solutions and gels produced with blends of gelatin and chitosan. To this end, this dissertation was divided into two studies: one with colloidal solutions and the other with gels, both with different pH: 3.5; 4.0; 4.5; 5.0; 5.5 and 6.0. The zeta potential of colloidal solutions based in blends and in pure biopolymers was previously determined. In the first study, colloidal solutions of type A porcine gelatin (GeA), type B bovine gelatin (GeB), chitosan (CH), blends of type A gelatin with chitosan (GeA:CH), and type B gelatin with chitosan (GeB:CH) were prepared and characterized for the determination of rheological properties by stationary tests (flow curves) and of viscoelastic properties by oscillatory tests (sweeps of deformation and frequency and temperature scanning). In the second experiment, gels were conveniently prepared from colloidal solutions of GeA:CH and GeB:CH and characterized for determination of mechanical properties by uniaxial compression tests and viscoelastic properties by stress relaxation tests. The zeta potential of all colloidal solutions linearly decreased as a function of pH. The CH solution had the highest zeta potential value, followed by GeA:CH, GeB:CH, GeA and GeB. The GeB being the only solution to show negative values at high pH. Thus, the isoelectric point (pI) of GeB was calculated as 5.1. Both blends showed pseudoplastic behavior, and the shear stress of the GeB:CH blends was 10 times greater than that of GeA:CH, and consequently, the GeB:CH blend had an apparent viscosity 10 times greater than that of GeA:CH for the same strain rate. Both shear stress and apparent viscosity increased as a function of pH. Regarding the viscoelastic properties, it was observed that the GeB:CH blends presented higher loss (G") and storage (G') modulus values than the GeA:CH blends, both of which increased as a function of pH. The beginning of the linear viscoelasticity region (RVL) for GeA:CH and GeB:CH was determined at 3% and 5% strain, respectively. According to the results of the frequency sweep tests, the GeB:CH blends behaved like diluted solutions. According to the results of the temperature scanning tests, the GeB:CH blends showed higher sol-gel and gel-sol transition temperatures than the GeA:CH blends, and these transition temperatures increased as a function of pH. Regarding the gels, it was observed that the GeB:CH-based gels had higher stress at break and Young's modulus than the GeA:CH gels, with values that increased as a function of pH; however, the deformation at break did not vary so strongly, ranging between 50 and 70%. G' and G" were higher in GeB:CH gels, but there was no significant difference (p>0.05) between the relaxation time values of the blends. In general, the pH influenced increasing the rheological, viscoelastic and mechanical properties of the solutions and gels; however, the type of gelatin (A or B) also influenced the behavior of the blends, with a more important effect for GeA:CH, as consequence of the difference of charge between them.
