O uso de agrotóxicos nos alimentos está relacionado com a modernização da agricultura e a necessidade de combate a pragas, e com o impacto negativo do uso indiscriminado desses químicos, a população tem adotado uma preocupação na forma de escolher seus alimentos, e assim a demanda por alimentos orgânicos vem crescendo exponencialmente. No entanto, existem especulações sobre uma maior contaminação microbiológica em alimentos orgânicos em comparação com os alimentos convencionais, devido ao uso de fertilizantes alternativos para seu cultivo. Assim, o presente trabalho teve por objetivo avaliar a contaminação microbiológica de hortaliças convencionais e orgânicas, certificadas e não certificadas, avaliando também a suscetibilidade dos isolados bacterianos a sanitizantes. Para isso, foram avaliadas 300 amostras de alface e rúcula, obtidas em pontos de venda no estado de SP, sendo 100 convencionais, 100 orgânicas certificadas e 100 orgânicas não certificadas. As amostras foram submetidas à detecção de Norovírus, Salmonella sp. e contagem de Escherichia coli. Para avaliar a suscetibilidade a sanitizantes, foram testados o ácido peracético (AP) e o hipoclorito de sódio. Foram detectadas E.coli, com contagens máximas da ordem de 10³ UFC/g, em 36% das amostras, sendo 9,3% em hortaliças convencionais, 13,3% em hortaliças orgânicas certificadas e 13,3% em hortaliças orgânicas não certificadas. A ocorrência de Salmonella sp. foi de 0,66% em hortaliças convencionais. Os resultados para norovírus não foram conclusivos. Indepentente da hortaliça ser proveniente da cultura orgânica ou convencional, a eficiência dos sanitizantes testados foi efetiva.

The use of pesticides in food is related to the modernization of agriculture and the need to combat pests, and with the negative impact of the indiscriminate use of these chemicals, the population has adopted a concern in how to choose their food, and thus the demand for Organic food has been growing exponentially. However, there is speculation about greater microbiological contamination in organic foods compared to conventional foods, due to the use of alternative fertilizers for their cultivation. Thus, this study aimed to evaluate the microbiological contamination of conventional and organic leafy greens, certified and uncertified, also evaluating the susceptibility of bacterial isolates to sanitizings. For this, 300 samples of lettuce and arugula, obtained at points of sale in the state of SP, were evaluated, being 100 conventional, 100 certified organic and 100 non-certified organic. The samples were subjected to detection of Norovirus, Salmonella sp. and Escherichia coli. To assess susceptibility to sanitizings, peracetic acid and sodium hypochlorite were tested. E.coli, with maximum counts around 10³ CFU/g, was detected in 36% of samples, 9.3% in conventional leafy greens, 13.3% in certified organic leafy greens and 13.3% in non-certified organic leafy greens. The occurrence of Salmonella sp. was 0.66% in conventional leafy greens. The results for norovirus were not conclusive. Regardless of whether the leafy greens comes from organic or conventional culture, the efficiency of the tested sanitizings was effective.
