Pouco se sabe sobre a ação de proteases microbianas no leite proveniente de vacas com genótipos contrastantes para β-caseína e, visto que a demanda do consumidor vem crescendo por produtos inovadores e de qualidade, e os benefícios que o leite A2 pode trazer para a saúde e bem-estar seguem em discussão na literatura. Destaca-se também que a quantificação de GMP em relação à ação de proteases microbianas também pode trazer discussões relevantes para a cadeia produtiva leiteira atual. O objetivo do estudo foi contaminar experimentalmente o leite proveniente de vacas com os genótipos A1A1, A1A2 e A2A2 para β-caseína com Bacillus cereus s.s. e Pseudomonas fluorescens e posteriormente quantificar o glicomacropeptídeo (GMP) a fim de verificar se existe influência dos três genótipos na degradação microbiana ou não da Kappa caseína (κ-CN) em diferentes tempos de incubação. Ao longo do tempo, houve aumento da concentração de GMP independentemente do genótipo ou contaminação. Comparando genótipos, foi possível perceber menores taxas de degradação da κ-CN para o leite proveniente de genótipo A1A1 para β-CN, seguido do A2A2 e por fim, A1A2. Desse modo, é importante manter a qualidade de um produto de valor agregado como o leite proveniente de vacas com genótipo A2A2 para β-CN que apresenta maior sensibilidade na degradação da κ-CN.

Little is known about the action of microbial proteases in milk from cows with contrasting genotypes for β-casein and, given that consumer demand has been growing for innovative and quality products, and the benefits that A2 milk can bring to health and well-being are still under discussion in the literature. It is also noteworthy that the quantification of GMP in relation to the action of microbial proteases can also bring relevant discussions to the current dairy production chain. The aim of the study was to experimental contamination of milk from cows with genotypes A1A1, A1A2 and A2A2 for β-casein with Bacillus cereus s.s. and Pseudomonas fluorescens and later to quantify the glycomacropeptide (GMP) in order to verify if there is an influence of the three genotypes on the microbial degradation of Kappa casein (κ-CN), at different incubation times. Over time, there was an increase in GMP concentration regardless of genotype or contamination. Comparing genotypes, it was possible to notice lower degradation rates of κ-CN for milk from genotype A1A1 to β-CN, followed by A2A2 and finally, A1A2. Thus, it is important to maintain the quality of a value-added product such as milk from cows with the A2A2 genotype for β-CN, which is more sensitive to κ-CN degradation.
