Visando caracterizar os profissionais que treinam manipuladores de alimentos, identificar as dificuldades das organizações para desenvolver esta atividade, descrever as características dos programas que vêm sendo realizados e identificar se o treinamento constitui ação de promoção da saúde, realizou-se um levantamento, utilizando amostra de conveniência para efetuar entrevistas individuais. Os resultados indicaram que a maioria dos treinadores são mulheres, em torno de 30 anos de idade, com formação em Nutrição, apesar do caráter multiprofissional da ocupação, e apenas pequena parcela possuía formação específica para atuar como educador. As dificuldades encontradas deviam-se à resistência dos treinandos em aceitarem ordens de pessoas mais jovens e com menor experiência em cozinhas, à baixa escolaridade dos manipuladores, à pouca disponibilidade de tempo destes para participarem de treinamentos e à escassez de recursos financeiros das organizações. As situações considerados mais importantes para treinar foram na admissão, as reciclagens e quando da ocorrência de não conformidade. O conteúdo mais freqüente era higiene pessoal e as metodologias mais empregadas aulas expositivas com auxílio de recursos impressos ou audiovisuais e demonstrações. De modo geral, as atividades de acompanhamento e avaliação não estavam sistematizadas. O treinamento de manipuladores foi considerado importante para garantir a qualidade dos alimentos, assim como a segurança alimentar dos consumidores. Todavia a atividade, ainda, não constituía ação promotora da saúde, apesar de haver indícios de uma consciência nesta direção. Recomendam-se ações no âmbito dos órgãos públicos, privados e dos responsáveis pelo treinamento que conduzam a intervenções de promoção da saúde.

Using a convenience sample, contrived in order to conduct individual interviews, a survey was carried out aiming at meeting the following issues: to characterize the professionals in charge of the trainings developed for food handlers; to disclose the difficulties the organizations have been faced with in order to develop this activity; to describe the characteristics of the programs that have been in use; and, to verify whether or not the actions developed constituted actions of health promotion. Results disclosed that the majority of the instructors were young women, with ages varying around 30 years, graduated in Nutrition, in spite of the multiprofessional character of the occupation and that only a small part of them had had specific academic background to act as teachers. The greatest difficulties found out were related to: the trainees' resistance in accepting orders from younger and less experienced persons in terms of kitchen activities; the food handlers' poor schooling and their short availability of time to participate in the trainings, besides the firm's lack of financial resources. The situations considered ideal for developing training courses were: at the admission, when some updating was necessary and when some non-compliance with the rules did occur. The most frequently addressed content was personal hygiene. The methodologies most frequently employed were a series of lectures with the aid of printed or audiovisual resources, besides practical classes with demonstrations. The following-up/maintenance and evaluation activities were not systematized. The food handlers' training was considered important for assuring the quality of food as well as the consumers' food safety. However, the activity did not constitute yet a health promotion action, in spite of there existing indications of some awareness in this direction. Actions leading to interventions focused on health promotion are recommended in the ambit of public and private agencies, and on the part of the own persons in charge of the food handlers' training.
