O queijo Minas meia cura é um produto de fácil fabricação, que pode ser produzido tanto no local de extração do leite, como no laticínio com maior controle sanitário. É um produto de boa aceitação pelos consumidores, sendo vendido nos estabelecimentos comerciais, entre eles os mercados municipais e nas ruas por ambulantes e feirantes. O objetivo deste estudo foi o de avaliar os locais de venda e a qualidade microbiológica de 60 amostras de queijo Minas meia cura comercializado por ambulantes, nas feiras livres e nos mercados municipais da cidade de São Paulo. Os resultados indicaram que a contagem de microrganismos: mesófilos e bolores/leveduras é semelhante para os três pontos de venda e a contagem dos psicrófilos foi maior nas amostras das feiras livres. Os locais de venda com melhor avaliação foram os mercados municipais. Do total de amostras estavam em desacordo com a Resolução da Diretoria Colegiada da Agência Nacional de Vigilância Sanitária 12 de 02 de janeiro de 2001, 26,7% para a presença de Staphylococcus aureus e 73,3% para coliformes fecais.

The Minas cheese half cured is a product of easy production that can be made at the ranch of milk: extraction, as well as at the dairy plant with better controlled sanitary conditions. It is a product of good acceptance by consumers, and sold at different commercial establishments such as local markets, street markets and by street vendors. The objective of this study was to evaluate the sales point and the microbiologic quality of 60 samples of half cured Minas cheese sold by street vendors, street markets and at local markets of the city of São Paulo. The results indicated that counts of mesophylic microorganisms and molds/yeasts were similar for the three sale points, while counts of psichrophylic organisms were higher for samples from the street markets. The commercial point with better condition evaluated were the local markets. From the total of samples, 26,7% were in disagreement with the Resolução da Diretoria Colegiada 12 de 02 de Janeiro de 2001 from Health Ministry - Brazil, for Staphylococcus aureus counts, and 73,3% for fecal coliform counts.
