No presente trabalho, descreve-se o projeto e construção de uma balança a quartzo usada para estudos de isotermas de sorção de água em materiais biológicos. Estudou-se pela técnica de isotermas de sorção e pressão termo estimuladas a água ligada a insulina. A capacidade de monocamada é de 46 moles de água por mol de monômero de insulina. Os experimentos de pressão termo estimulada indicam que em média, as moléculas de água estão ligadas pó 1,3 pontes de hidrogênio

This work describe the design and construction of a quartz micro-balance which is used for the study of isotherms of water sorption, in biological materials. Using the techniques of sorption isotherms and thermo stimulated pressure the bound water in insulin was studied. The monolayer capacity is 46 mols of water per mol of monomer of insulin. The termo-estimulated pressure experiments indicate that in average the water molecules are bond through 1,3 hydrogen bonds
