A cachaça é um produto tipicamente brasileiro que vem ganhando cada vez mais reconhecimento internacional. O processo fermentativo de cachaça emprega o reciclo de células de levedura, normalmente por decantação, para servir de inóculo para a fermentação subsequente. O objetivo do estudo foi avaliar a qualidade química e sensorial da levedura comercial DistilaMax RM (Lallemand Biofuels and Distilled Spirits) na produção de cachaça com uso de reciclos fermentativos. Cepa esta, destinada à produção de destilados a base de cana-de-açúcar e ainda não utilizada na produção de cachaça. Além disso, foi possível compará-la com a levedura comercial CanaMax (Lallemand Biofuels and Distilled Spirits), já estabelecida na produção de cachaça. A contribuição dessas cepas na formação de compostos que melhoram a qualidade química e sensorial da aguardente foram avaliadas. Para as análises físico-químicas foi utilizada a cromatografia gasosa para a quantificação de compostos voláteis (CG-DIC), carbamato de etila e ésteres (CG-MS). Sensorialmente, os testes realizados foram de aceitação e RATA (Rate All That Aplly). Os resultados foram estatisticamente avaliados através de Análise Fatorial Múltipla (AFM) e Análise de Componentes Principais (APC). Ao longo dos reciclos, o rendimento, bem como, os congêneres voláteis formados apresentaram variações devido à possíveis interferentes. Foi possível relacionar o perfil sensorial com a composição química obtida pelas diferentes cepas de levedura e observou-se que o coeficiente de congêneres das cachaças produzidas pela cepa CanaMax foi mais consistente se comparado com a cepa DistilaMax RM, porém a amostra mais bem aceita sensorialmente foi referente ao sétimo ciclo da cepa DistilaMax RM.

Cachaça is a typical Brazilian product that is, progressively gaining international recognition. The fermentative process of cachaça employs the recycling of yeast cells, usually by decantation, to serve as an inoculum for subsequent fermentation. The objective of the research was to evaluate the chemical and sensory quality of commercial yeast DistilaMax RM (Lallemand Biofuels and Distilled Spirits) in the production of cachaça with fermentative recycle. This strain is intended for the production of sugarcane-based distillates and not yet used in the production of cachaça. In addition, it was possible to compare it with yeast CanaMax (Lallemand Biofuels and Distilled Spirits), already established in the production of cachaça. The contribution of these strains in the formation of compounds that improve the chemical and sensory quality of the distillate were avaluated. For chemical analysis, gas chromatography was used to quantify volatile compounds (GC-FID), ethyl carbamate and esters (GC-MS). Sensorially, the tests was acceptance and RATA (Rate All That Aplly). The results were statistically evaluated using Multiple Factor Analysis (MFA) and Principal Component Analysis (APC). Throughout the recycles, the yield, as well as, the volatile congeners formed, showed variations due to possible interferences. It was possible to relate the sensory profile with the chemical composition obtained by different yeast strains and it was observed that the coefficient of congeners of the cachaças produced by CanaMax strain was more consistent comparing to the DistilaMax RM strain, however, the best sensorially accepted sample was related to the seventh cycle of DistilaMax RM strain.
