A cor é um atributo muito importante para a fabricação de açúcar uma vez que ela está relacionada diretamente a qualidade e valor do produto. Um dos gargalos da produção de açúcar no Brasil é a utilização de sulfito durante o processo de clarificação, tal técnica permite um residual de enxofre que limita a comercialização do açúcar branco para mercados importantes como o europeu. É criado então a necessidade de buscar processos alternativos de clarificação. A eletrocoagulação surge como um candidato devido seu sucesso no tratamento de muitos compostos orgânicos. O presente trabalho buscou avaliar a capacidade da eletrocoagulação na clarificação do caldo de cana-de-açúcar. O trabalho foi dividido em duas partes, num primeiro momento foi testado as variáveis que influenciam na performance da eletrocoagulação com eletrodos de alumínio. Foi utilizado um delineamento fatorial fracionado com a metodologia da superfície de resposta para avaliar a influência da tensão, pH, sólidos solúveis totais (Brix), temperatura e distância dos eletrodos no processo eletrocoagulativo. As respostas foram: turbidez, cor Icumsa, teor de sacarose aparente (pol%caldo) e açúcares redutores (AR). O residual de alumínio também foi analisado pela voltametria e pela espectrometria de massas com plasma acoplado indutivamente (ICP-MS). Ainda para os eletrodos de alumínio foram avaliados a cor Icumsa, turbidez, concentração de compostos fenólicos e parâmetros de cor CIELAB através de cinéticas. O planejamento fatorial fracionado indicou que a eletrocoagulação com eletrodos de alumínio reduziu a cor e a turbidez, em especial a baixo pH (2,5), alta tensão (25 V) e mínima distância entre os eletrodos (1,0 cm). Todavia, nessas condições a sacarose foi degradada a AR. A concentração do alumínio residual após o tratamento foi elevado somando as três fases formadas, porém apenas 2% do alumínio ficou no caldo clarificado. O estudo cinético indicou que maiores tensões atingiram maiores reduções de cor Icumsa, turbidez e compostos fenólicos totais (embora sem impactar no conteúdo de compostos fenólicos simples). A colorimetria triestímulos apresentou alguns comportamentos que foram além das análises tecnológicas, incluindo que o tratamento com maior tensão (65 V) mudou a pigmentação do caldo de cana-de-açúcar e teve uma estabilização do croma. Num segundo momento foi avaliada a capacidade da eletrocoagulação com eletrodos de ferro e seu impacto na descontaminação microbiológica do caldo e fermentação. Também se objetivou avaliar a combinação da eletrocoagulação com a peroxidação e peroxi-oxidação. Foi executado um planejamento fatorial completo 23. Os fatores avaliados foram: pH inicial, corrente aplicada e tempo de reação. As respostas foram açúcares redutores (AR) e turbidez. Nas condições ótimas (pH 4,9; 0,77 A e 29 min), houve diminuição da turbidez em 92%, sem grandes variações nos teores de AR. As condições otimizadas reduziu a carga microbiana do caldo de cana-de-açúcar, e não houve variação no processo fermentativo. A combinação da eletrocoagulação com a aplicação externa de peróxido de hidrogênio reduziu em mais de 80% a absorbância a 420 nm, porém sem impacto na turbidez e com aumento de AR de até 40%. As varreduras de absorbância indicaram que a eletrocoagulação e o peróxido atuaram na redução de compostos fenólicos. Por fim, não foi possível otimizar a peroxi-eletrocoagulação devido a falta de eletrodos de qualidade.

The color is an important attribute for the sugar manufacturing since it has correlation with the final product quality and value. One of the sugar manufacturing problems in Brazil is the use of sulfitation during clarification process; this technique allows for residual sulfur that limits the commercialization of Brazilian white crystal sugar to important market as European. Then there is a need to find alternative processes of clarification. Electrocoagulation emerges as an possibility due its success in the treatment of many organic compounds. This research aimed to evaluate the electrocoagulation capacity in the sugarcane juice clarification. The Thesis is divided in two parts, in the first moment it was tested the variables that influence in the electrocoagulation with aluminum electrodes. This work chapter evaluated the variables which influence the electrocoagulation with aluminium electrode performance on the sugarcane juice purification. A fractional factorial design with the surface response methodology was used to evaluate the influence of voltage, pH, soluble solids total (Brix), temperature and distance between the electrodes in the electrocoagulation process. The outputs were turbidity, Icumsa color, content of sucrose (as pol%juice) and reducing sugars (RS). Residual aluminum was also analyzed by voltammetry and inductively coupled plasma mass spectrometry (ICP-MS). After that, it was evaluated Icumsa color, turbidity, phenolic compounds content and CIELAB color parameters by kinetics. The factorial design showed that electrocoagulation with aluminum electrodes reduced color and turbidity, in special at low pH (2.5), the highest voltage (25 V) and minimal distance of electrode (1.0 cm). Although in this condition sucrose was degradated to RS. The residual aluminum concentration in the three phases formed after the treatment was elevated, only 2% stayed in the clarified juice though. Then the kinetics presented that higher voltage treatments achieved greater reduction of Icumsa color, turbidity and total phenolic compounds (although it was not impacted simple phenolic content). Triestimulus colorimetry presented some pattern that went beyond from technological analysis, including that higher tension essay (65 V) changed the pigmentation of sugarcane juice and an early stabilization on chroma. In a second moment, it was evaluated sugarcane juice clarification by electrocoagulation with iron electrodes and their impact on microbial decontamination and fermentation. It was also aimed to evaluate the combination of electrocoagulation with peroxidation and peroxi-coagulation. It was executed a complete factorial design 23. The factors were initial pH, current and time. The outputs were turbidity reduction and reducing sugars (RS) concentration. In the optimal condition (pH 4.9; 0,77 A e 29 min), there were 92% turbidity reduction, without higher variation in RS content. The optimal condition were capable of microbial reduction from sugarcane juice too, there is no variation of fermentation. The combination of electrocoagulation with external application of hydrogen peroxide reduced more than 80% of absorbance at 420 nm, however there were no impact on turbidity and the RS content increase up to 40%. The scanning showed electrocoagulation and H2O2 reduced phenolic compounds. Then, it was not possible optimize peroxi-electrocoagulation due the lack of quality electrodes.
