O estudo teve como objetivo descrever a percepção dos manipuladores domésticos de alimentos, acerca das cinco chaves para uma alimentação mais segura preconizada pela OMS e avaliar a relação entre a percepção dos manipuladores domésticos de alimentos e algumas variáveis sociodemográficas. Para tal elaborou- se um formulário com questões abertas, estruturadas e semiestruturadas com questões sobre manipulação de alimentos no domicílio, de acordo com o conteúdo das cinco chaves para alimentação segura da OMS. Participaram do estudo 123 pessoas, entre homens e mulheres que preparam alimentos no domicílio. Obteve-se como resultados que os participantes da pesquisa atribuíram a responsabilidade sobre o alimento seguro principalmente a noções associadas as práticas rotineiras do cotidiano doméstico. Ao assumirem uma parcela da responsabilidade, tem-se um fator importante para reduzir as DTA a longo prazo, uma vez que a família é responsável por ensinar hábitos de higiene alimentar e garantir um alimento seguro depende de todos. Também foi atribuída a responsabilidade as indústrias alimentícias e produtores rurais, uma vez que os meios de comunicação divulgam surtos a partir de produtos industrializados, acarretando na falsa impressão que apenas esses alimentos podem causar algum dano à saúde. Não há clara noção sobre ‘ alimento seguro’ , sendo frequentemente associada a aspectos nutricionais e não boas práticas de higiene alimentar.

The study aimed to describe the perception of domestic food handlers, about the five keys to safer food advocated by WHO and to evaluate the relationship between the perception of domestic food handlers and some sociodemographic variables. For this purpose, a form was prepared with open, structured and semi-structured questions with questions about food handling at home, according to the content of the five keys for safe food from WHO. The study included 123 people, including men and women who prepare food at home. It was obtained as results that the participants of the research attributed the responsibility for the safe food mainly to notions associated with the routine practices of the domestic routine. When assuming a part of the responsibility, there is an important factor to reduce the DTA in the long term, since the family is responsible for teaching food hygiene habits and ensuring safe food depends on everyone. Responsibility was also attributed to the food industries and rural producers, since the media disseminate outbreaks from industrialized products, leading to the false impression that only these foods can cause any damage to health. There is no clear notion of ‘safe food’, and it is often associated with nutritional aspects and not good food hygiene practices.
