Este estudo teve o objetivo de refinar e reaplicar o instrumento de caracterização de Cultura de Segurança de Alimentos (CSA) validado por Galvão, Ferreira e Balian (2020), fazendo ajustes de alguns itens que o compõem, visando reduzir indução de respostas e vieses indesejáveis. O instrumento original possuía 31 itens e escala Likert de 7 pontos, e teve 10 itens alterados neste estudo, sem alteração do contexto dos mesmos. O instrumento foi aplicado em 300 manipuladores de alimentos prontos para o consumo, em 13 lojas de uma rede de hipermercados. Após a aplicação do instrumento, sucederam-se análises estatísticas descritivas e comparativas dos dados com o instrumento original. A análise fatorial demonstrou inadequação do item 6 “As políticas e os procedimentos de segurança alimentar da empresa são só uma obrigação para evitar problemas com a fiscalização” ao instrumento. Observou-se que as respostas aos itens alterados foram significativamente diferentes entre o instrumento modificado e o original. Assim, concluiu-se que (1) o estudo permitiu refinar o instrumento. As alterações propostas para o refinamento do modelo validado por Galvão, Ferreira e Balian (2020) geraram resultados mais robustos; (2) o instrumento foi capaz de detectar elementos de Segurança de Alimentos, permitindo a caracterização da CSA na organização; (3) o instrumento pode ser aplicado em estabelecimentos varejistas de alimentos e é capaz de caracterizar a CSA; (4) recomenda-se a retirada do item 6 em usos futuros do instrumento.

This study aimed to refine and to reapply the instrument for Food Safety Culture (FSC) characterization validated by Galvão, Ferreira and Balian (2020), making adjustments to some items that compose it, in order to reduce the induction of undesirable responses and biases. The original instrument had 31 items and a seven-point Likert scale with 10 items being altered in this study, without changing their context. The instrument was applied to 300 ready-to-eat food handlers, in 13 stores of a hypermarket chain. After the application of the instrument, descriptive and comparative statistical analyzes were performed between this data and those of the original instrument. The factor analysis demonstrated that item 6 “The company's food security policies and procedures are only an obligation to avoid problems with inspection” was inappropriate for this instrument. It was observed that responses for changed items were significantly different between the modified instrument and the original. Thus, it was concluded that (1) the study allowed to refine the instrument. The changes proposed to refine the model validated by Galvão, Ferreira and Balian (2020) generated more robust results; (2) the instrument was able to detect elements of Food Safety, allowing the characterization of the FSC in the organization; (3) the instrument can be applied in retail food establishments and is capable to characterize the FSC; (4) it is recommended to remove item 6 for future uses of instrument.
