A cada vez mais competitiva a indústria de bioetanol está sempre em busca de melhorar e inovar as eficiências e rendimentos da produção, desta forma investigações de pequenos detalhes que fazem a diferença no processo produtivo, proporcionando aumento de litros por tonelada de cana de açúcar. Neste sentido o objetivo deste estudo foi a avaliação de um fenômeno recorrente em quase todas as fermentações etanólicas do Brasil sobre as leveduras rugosas (LR). Este tipo de levedura provoca redução da produção de etanol pelo simples fato de que as leveduras lisas (LL) inoculadas no início do processo de fermentação terem se estressado pela ação de altas temperaturas, em razão de não ser dada a devida atenção à refrigeração das dornas. Os resultados deste estudo e nas usinas mostraram que as leveduras, depois de se estressarem, diminuem a capacidade de produzir etanol com a mesma capacidade de conversão do início do processo quando estavam desestressadas, leveduras lisas (LL). Nas leveduras estressadas, que são as rugosas (LR), as células filhas não se soltam das células mãe e a área de contato diminui, ocasionando menor produção de etanol a partir de substrato padrão. A levedura do processo transformada (LPT), da empresa Microserv Biotecnologia, foi obtida de um processo que transforma as leveduras rugosas em lisas novamente. Dessa forma, primeiramente num estudo em escala laboratorial, comparou-se a EF (eficiência de fermentação) variando-se as proporções de leveduras LR e LPT com concentração de açúcar redutor inicial (ARTi). Por meio de um planejamento fatorial 22, obteve-se um ganho de 6,86% de EF com a levedura LPT e 20% de ARTi. Foi feita a validação pelo teste de Tukey da diferença de médias da EF comparando as três leveduras LL, LR e LPT fermentadas com 15% de ARTi e não houve diferença estatística a p<=0,05 na média da EF da LL e da LPT. Ressalta-se que a LL só se mantém no processo no início da safra. E para avaliar se a LPT se manteria estável em toda a safra, foi proposto um estudo da LPT em escala industrial em usina na região de Pirassununga/SP durante toda a safra de 2018 e de abril até setembro da safra de 2019. A LPT foi inoculada nas dornas de fermentação no início das safras de 2018 e 2019 e, mesmo em temperaturas mais altas, manteve-se em boa concentração até o final da safra mostrando resistência a altas temperaturas. Comparando-se os resultados de EF da safra de 2017, que não utilizou a levedura LPT, com as safras estudadas de 2018 e 2019 com a LPT, pode se observar que as duas últimas safras apresentaram acréscimos de EF de 3,92% e 4,36%, respectivamente, segundo dados industriais. O impacto dos resultados obtidos foi a maior produção de bioetanol com os mesmos insumos, equipamentos e infraestrutura física da Usina. Tomando-se como referência esta unidade industrial estudada, que produz em média 100 milhões de litros por safra, aumentar-se-á a produção em torno de quatro milhões de litros somente pela ação da levedura.

The increasingly competitive bioethanol industry is always seeking to improve and innovate efficiency and production yield. In this way, the study of the small details that make all difference in the production carrying out in increase of litres of bioethanol per ton of sugar cane. The aim of this study about rough yeast (RY) that occured like a phenomenon which is widespread in almost of the bioethanol fermentation in Brazil. YR is a type of yeast, can cause a reduction in the bioethanol production due to the fact that plain or smooth yeast (SY) inoculated in the fermentation has been stressed by the action of high temperatures, due to not being given due attention to refrigeration system. By the results of fermentation efficiency (FE) in industry or in this study, when stressed smooth yeasts decrease their ability to produce ethanol with the same conversion capacity as the beginning of the process when they were de-stressed, smooth yeasts (SL). In stressed yeasts, which are the rough ones (RY), the daughter cells do not detach from the mother cells and the contact area decreases, causing lower ethanol production from standard substrate. The yeast from transformed process (PTY), from Microserv Biotecnologia, was obtained from a process that turns rough yeasts (RY) into smooth or plain yeasts again (SY). Thus, in laboratory-scale in this study, the fermentation efficiency (FE) was compared by varying the proportions of LR and PTY yeasts with initial reducing sugar concentration (ARTi). By using a 22 factorial design, a gain of 6.86% FE using PTY yeast and 20% ARTi. The Tukey test validated the FE mean difference comparing the three SY, RY and PTY yeasts in fermentation with 15% ARTi and there was no statistical difference at p<=0.05 in the mean SY and PTY in EF. It is noteworthy that SY only remains in the process at the beginning of the harvest. Moreover, to assess whether PTY would remain stable throughout the harvest, an industrial-scale PTY study was proposed at a bioethanol industry in the Pirassununga/SP region throughout the 2018 harvest and from April through September of the 2019 harvest. PTY was inoculated in fermentation in the beginning of harvest 2018 and 2019. It was observed that, even at higher temperatures in fermentation, the PTY remained in good concentration until the end of the harvest showing resistance to high temperatures. Comparing the process results (FE) of the harvest that did not use the PTY (2017) with the following harvests (2018 and 2019), they presented FE increases about 3.92% and 4.36%, respectively, according to industrial data. The impact of this result is the higher production of bioethanol with the same inputs, equipment and physical infrastructure as the industrial plant. Taking as a reference an industrial unit studied that produces on average 100 million liters per harvest, the production will increase around four million liters only by the action of PTY.
