O mercado de amidos modificados está em constante evolução, visando superar uma ou mais limitações dos amidos nativos e proporcionar a produção de amidos com novas propriedades funcionais e de valor agregado. A modificação do amido por ozônio é considerada uma tecnologia verde, pois não gera resíduo e tem se mostrado uma técnica oxidante eficaz em estudos recentes. O amido de quinoa tem grânulos muito pequenos com propriedades únicas. Por tanto, este trabalho teve como objetivo avaliar o efeito do tratamento com ozônio sobre as propriedades estruturais, térmicas, funcionais e reológicas do amido de quinoa. Os tempos de aplicação do ozônio, nomeados como tempo de geração de ozônio (TGO), na suspensão de amido (10%, m/m) foram 10, 20 e 30 min. O teor de amilose, os valores de pH e a cristalinidade relativa diminuíram com o aumento do TGO. Por outro lado, o conteúdo de grupos carbonila/ carboxila, claridade de pasta e capacidade de absorção de óleo aumentaram com o aumento do TGO se comparado ao amido de quinoa nativo. A análise por cromatografia de permeação em gel indicou despolimerização da amilose como resultado da hidrólise do amido. Os resultados mostraram que 30 min de tratamento com ozônio aumentou significativamente o diâmetro médio das partículas e a análise morfológica apresentou um achatamento de alguns dos grânulos de amido, indicando modificação branda. O tratamento com ozônio aumentou a temperatura de início da gelatinização e diminuiu a entalpia de gelatinização do amido de quinoa. Após a retrogradação, não foi observada nenhuma diferença significativa (p < 0,05) nas propriedades térmicas, analisadas por DSC, entre as amostras tratadas com ozônio e no amido nativo. A viscosidade aparente de pico (39%), breakdown (88%) e o setback (53%) aumentaram significativamente para a amostra tratada com ozônio por 10 min, quando comparado ao amido nativo, porém sem mudanças significativas entre os diferentes TGO. As curvas de fluxo obtidas para as pastas / géis de amido de quinoa (5% b.s., 25 °C) nativo e tratados com ozônio apresentaram comportamento não-Newtoniano e pseudoplástico, que foi modelado pela equação Lei da Potência (R2 > 0,998). A viscosidade aparente, a pseudoplasticidade e o índice de consistência dessas amostras aumentaram com o aumento do TGO. Nos testes de varredura de frequência, a viscoelasticidade para as amostras gelatinizadas de amido de quinoa (5% b. s., 25 °C) não foi alterada após o tratamento do amido com ozônio e apresentaram comportamento de gel fraco (G'>G"). Concluiu-se que os tempos de aplicação de ozônio foram suficientes para promover alterações tanto nas propriedades estruturais, como nas propriedades funcionais e reológicas do amido de quinoa, ampliando seu espectro de uso em aplicações industriais.

The market for modified starches is constantly evolving, aiming to overcome one or more limitations of native starches and to provide the production of starches with new functional and value-added properties. Starch modification using ozone is considered a green technology, since, it does not generate residues and has been shown to be an effective oxidizing technique in recent studies. Quinoa starch has very small granules with unique properties. Then, the objective of this work was to evaluate the effect of ozone treatment on the structural, thermal, functional and rheological properties of quinoa starch. The ozone application times, named as ozone generation time (OGT), in a starch suspension (10% wt) were 10, 20 and 30 min. The amylose content, pH values and relative crystallinity decreased with increasing OGT. In contrast, the content of carbonyl / carboxyl groups, paste clarity and oil absorption capacity increased with increasing OGT when compared with native quinoa starch. Gel permeation chromatography analysis indicated amylose depolymerization as a result of starch hydrolysis. The results showed that 30 min of treatment with ozone increased significantly the average diameter and the morphological analysis presented flattening of some of granules, indicating slight modification. The treatment with ozone increased the gelatinization onset temperature and decreased the gelatinization enthalpy of quinoa starch. No significant changes (p < 0.05) were observed in thermal properties after retrogradation, analyzed by the DSC, of ozone treated samples and of native starch. The apparent peak viscosity (39%), breakdown (88%) and setback (53%) increased significantly for the sample treated with ozone for 10 min, when compared with native starch, but without significant changes between the different OGT. The flow curves obtained for quinoa starch (5% wt, 25 °C) pastes / gels presented non-Newtonian and pseudoplastic behavior, which were modeled by the Power Law Equation (R2 > 0.998). The apparent viscosity, pseudoplasticity, and consistency index of these samples increased with the increase in OGT. In the frequency sweep tests, the viscoelasticity of the gelatinized quinoa starches samples (5% wt, 25 °C) was not altered after the ozone treatment and presented a weak gel behavior (G'> G"). In conclusion, the ozone application times were sufficient to promote changes on the structural, functional and rheological properties of quinoa starch, increasing its spectrum of use in industrial applications.
