O Brasil é o segundo maior produtor de etanol do mundo. A produção de etanol brasileira é quase que exclusivamente por via fermentativa. A fermentação alcoólica é uma etapa do processo industrial que consome grandes quantidades de água para diluir o xarope ou melaço para o preparo do mosto. Ademais, para cada litro de etanol produzido são gerados cerca de 10 a 14 litros de vinhaça. Este resíduo apresenta alto potencial poluente e pode atingir os recursos hídricos. Contudo, é composto por mais de 90% de água. Nesse sentido, uma estratégia para reduzir o potencial poluidor é realizar a produção de biogás através da biodigestão anaeróbia da vinhaça. Após esse processo, a água contida na vinhaça biodigerida pode ser tratada, com o auxílio de processos físico-químicos, e reutilizada em outros processo industriais. Por esses motivos, o objetivo do trabalho foi recuperar a água presente na vinhaça biodigerida e utilizá-la na diluição do xarope para fermentação alcoólica. Na primeira etapa da pesquisa, a vinhaça biodigerida foi submetida aos tratamentos físico-químicos, os quais consistiram em etapas de coagulação, sedimentação, centrifugação, filtragens sucessivas em filtro de areia, filtro de polipropileno (20 e 5 μm), filtro de carvão ativado e microfiltração (0,22 μm). A avaliação do resultado desses tratamentos foi realizada com base nos resultados de pH, condutividade, teor de sólidos totais (ST), sólidos totais voláteis (STV) e sólidos totais fixos (STF), demanda química de oxigênio(DQO), turbidez, teores de cátions e ânions. A segunda etapa, consistiu na realização de fermentação alcoólica com 4 ciclos fermentativos, utilizando a levedura Saccharomyces cerevisiae. Foram investigados dois tratamentos, a saber: 1) Tratamento 1 (T1) - Controle: o mosto foi preparado com diluição do xarope realizada com o uso de água destilada; e, Tratamento 2 (T2): o mosto foi preparado com a diluição do xarope utilizando água proveniente da vinhaça biodigerida após os tratamentos supracitados. Na 2ª etapa foram avaliados os seguintes parâmetros: açúcares redutores totais (ART), teor alcoólico, teores de cátions e ânions, glicerol, viabilidade celular, concentração de células de levedura, contaminação microbiana, rendimento e produtividade. As amostras de vinhaça biodigerida e amostras de água proveniente da vinhaça biodigerida apresentaram os seguintes resultados: pH 7,68 e a 7,99, respectivamente; turbidez de 2190 (±39,69) NTU e a 729,67(±10,07) NTU, respectivamente; e os teores totais de cátions de 24.984,67 mg L-1 e para 22.930,99 mg L-1, respectivamente. Também foram observadas diminuições nos teores dos seguintes componentes da água recuperada da vinhaça biodigerida: condutividade: diminuição de 39%; o teor de ST: redução de 28,2% e de STV diminuição de 42,5%. Já os teores totais de ânions nas amostras de água recuperada e tratada não apresentaram diferença significativa Na fermentação alcoólica, aquela conduzida sob as condições do T2 apresentou diferenças significativas no rendimento, em que no ciclo 3 a diferença entre os dois tratamentos foi de 12,6% (T1: 83,56% e T2: 70,99%) e no ciclo 4 essa diferença foi de 9,1 % (T1: 80,65% e T2: 71,56%). A produtividade no T2 também foi menor; no ciclo 2, a diferença entre T1 e T2 foi de 1,6 mL L-1 h-1 (T1: 8,83 ml L-1 h-1 e T2: 7,25 ml L-1 h-1); no ciclo 3 a diferença foi ainda maior atingindo 2,96 mL L-1 h-1 (T1: 10,0 mL L-1 h-1 e T2: 7,04 mL L-1 h-1). Esse comportamento também foi observado no ciclo 4, quando a produtividade de T1 foi 2,47 mL L-1 h-1 maior do que T2, ou melhor, T1: 10,25 mL L-1 h-1 e T2: 7,78 mL L-1 h-1. Essas diferenças nos resultados de T2 em relação aos do Tratamento Controle podem ser atribuídos altos teores de cátions no mosto, uma vez que as diferenças foram muito grandes, pois em T1 foram encontrados teores médios de 11206,86 ±123,99 mg L-1 e em T2, os resultados encontrados foram de 29.521,14 ±597,29 mg L-1. Isso pode ter induzido estresse osmótico às leveduras submetidas ao T2, de modo que, afetou negativamente a produtividade da fermentação. Portanto, conclui-se que é possível utilizar a água proveniente da vinhaça biodigerida no preparo do mosto para a fermentação alcoólica. Contudo, há necessidade de tratamento complementar aos realizados no presente estudo, visando reduzir a concentração de sais e por consequência o estresse osmótico às leveduras.

Brazil is the second largest producer of ethanol in the world. Brazilian ethanol production is almost exclusively via fermentation. Alcoholic fermentation is a stage of the industrial process that consumes large amounts of water to dilute the syrup or molasses for the preparation of the must. In addition, about 10 to 14 liters of vinasse are generated for each liter of ethanol produced. This residue presents high polluting potential and can reach water resources. However, it is composed of more than 90% water. In this sense, a strategy to reduce the polluting potential is to realize biogas production through anaerobic biodigestion of vinasse. After this process, the water contained in biodigested vinasse can be treated with the support of physico-chemical processes and reused in other industrial processes. For these reasons, the objective of the work was to recover the water present in the biodigested vinasse and to use it in the dilution of syrup for alcoholic fermentation. In the first phase of the research, biodigested vinasse was submitted to physical-chemical treatments, which consisted of coagulation, sedimentation, centrifugation, successive sand filtration, polypropylene filter (20 and 5 μm), activated carbon filter and microfiltration (0, 22 μm). The evaluation results of these treatments were carried out based on the results of pH, conductivity, total solids (TS), total volatile solids (STV), and fixed total solids (FTS), chemical oxygen demand (COD), turbidity, content of cations and anions. The second stage consisted of alcoholic fermentation with 4 fermentation cycles, using Saccharomyces cereviasiee yeasts. Two treatments were investigated: 1) Treatment 1 (T1) - Control: the wort was prepared with dilution of the syrup performed with the use of distilled water; and Treatment 2 (T2): the wort was prepared by diluting the syrup using water from the biodigested vinasse after the above treatments. In the second stage, the following parameters were evaluated: total reducing sugars (ART), alcohol content, cation and anion contents, glycerol, cell viability, yeast cell concentration, microbial contamination, yield and productivity. Samples of biodigested vinasse and samples of water from biodigested vinasse presented the following results: pH 7.68 and 7.99, respectively; turbidity of 2190 (± 39.69) NTU and 729.67 (± 10.07) NTU, respectively; and the total cation contents of 24,984.67 mg L-1 and 22930.99 mg L-1, respectively. Reductions of the following proportions were also observed in the water recovered from biodigested vinasse: conductivity: 39% decrease; the ST content: reduction of 28.2% and STV decrease of 42.5%. The total amount of anions in the samples of recovered and traded water did not present significant difference. In the alcoholic fermentation, the one conducted under T2 conditions presented significant differences in the yield; , in which in cycle 3 the difference between the two treatments was 12.6% (T1: 83.56% and T2: 70.99%) and in cycle 4 this difference was 9.1% (T1: 80, 65% and T2: 71.56%). Productivity in T2 was also lower; in cycle 2 the difference between T1 and T2 was 1.6 mL L-1 h-1 (T1: 8.83 mL L-1 h-1 and T2: 7.25 mL L-1 h-1); in cycle 3 the difference was even higher reaching 2.96 mL L-1 h-1 (T1: 10.0 mL L-1 h-1 and T2: 7.04 mL L-1 h-1). This behavior was also observed in cycle 4, when the productivity of T1 was 2.47 mL L-1 h-1 higher than T2, or better, T1: 10.25 mL L-1 h-1 and T2: 7.78 mL L-1 h-1. These differences in the results of T2 in relation to the Control Treatment can be attributed high levels of cations in the wort, since the differences were very large, because in T1 were found average contents of 11206.86 ± 123.99 mg L-1 and in T2, the results found were 29,521.14 ± 597.29 mg L-1. This may have induced osmotic stress to the yeasts submitted to T2, so that it negatively affected the fermentation productivity. Therefore, it is concluded that it is possible to use water from the biodigested vinasse in the preparation of the must for alcoholic fermentation. However, there is a need for complementary treatment to those carried out in the present study, in order to reduce the concentration of salts and consequently the osmotic stress to the yeasts.
