Com a utilização de quatro eqüinos, fêmeas, adultas, sem raça definida, com peso médio de 450 Kg em um delineamento experimental quadrado latino 4X4, com arranjo fatorial dos tratamentos e medidas repetidas no tempo, os objetivos deste trabalho foram, avaliar a digestibilidade aparente total da matéria seca, da matéria orgânica, do amido, da proteína bruta, da fibra em detergente neutro, da fibra em detergente ácido e a aceitabilidade de dietas contendo concentrado a base de milho ou sorgo nas duas formas de processamento, triturado ou extrusado; quantificar os parâmetros do metabolismo da glicose e insulina pós-ingestão nos diferentes tratamentos; analisar a viabilidade econômica da substituição de milho por sorgo em dietas para eqüinos. Os resultados indicaram que os tratamentos contendo ingrediente extrusado apresentaram coeficientes de digestibilidade aparente total da MS, MO, FDN e FDA maiores que os triturados. Em relação ao amido, os coeficientes de digestibilidade aparente total apresentam valores semelhantes entre os tratamentos. A resposta glicêmica e insulinêmica maior nos tratamentos extrusados indica que o processamento pode ser útil na alimentação de eqüinos. Os resultados da análise econômica indicaram a vantagem da substituição do milho por sorgo em dietas para eqüinos e a desvantagem do uso do processo de extrusão para milho e sorgo, tomando-se como referência a digestibilidade dos nutrientes, mas, quando se toma como referência a resposta plasmática de glicose e insulina o uso da técnica de processamento passa a ser economicamente viável
